ORIGINAL ALE

Wise and all-seeing, the owl is a reminder to always keep your eyes on the prize – in our case, beautiful beer with a purity that stands the test of time. So it’s only natural that it should symbolise our first beer created in the Yarra Valley, under the watchful gaze of original founder, Phil Sexton.

This is a classic European Golden Ale with a pale, slightly cloudy golden glow and creamy, foamy head. Double fermented with special live yeast and bacillus cultures that naturally carbonate this unfiltered and unadulterated traditional beer.

STYLE:

Classic European Golden Ale.

Aroma:

Malty, biscuity with underlying hints of fresh stone fruits and dusted with fresh hop spices.

Palate:

Smooth and creamy, roasted malt/biscuit notes and filled out with hints of caramel, toffee, finishing with a slight tart/bitter character. Reminiscent of the classic draught real ales found in great bars of Europe, where you don’t want to leave.

English Marris Otter barley malt, Australian pale barley malt, German specialty barley malts.

Hops:

English Fuggles and East Kent Goldings, European Styrian Goldings.

Water:

Yarra Valley mountain water.

tasting:

Full, rich, creamy with long firm finish. Best enjoyed between 4-6°C.

REDBACK

This Bavarian-inspired wheat beer started life called Summer Weizen (German for wheat). Incredibly popular but unpronounceable, it quickly became apparent a name change was in order. Following a hot-tub brainstorming session (hey, it was the 80’s), it was re-christened Redback. The rest is history. Sparkling blonde Belgian Wheat (Wit) ale style with a brooding pale glow that draws upon its origins as Australia’s first Wheat beer. Double fermented with special live yeast and bacillus cultures that naturally carbonate this unfiltered and unadulterated traditional beer. Palate is creamy, soft yet firm; walking a delicate line between fullness and fineness while balancing lovely lemon curd and earth fruit notes to produce a well-balanced mild palate with high drinkability. Finishes crisp and fresh.

Lemon zest and floral spice with underlying fruit, a hint of hop spice and a slightly biscuity malt tone.

Palate:

Creamy, soft yet firm; walking a delicate line between fullness and fineness while balancing lovely lemon curd and earth fruit notes to produce a well-balanced mild palate with high drinkability. Finishes crisp and fresh.

European Hersbrucker, Australian Vic Secret.

ALPHA

The idea for Alpha came after our then Head Brewer, Brad Rogers, visited the legendary Sierra Nevada brewery in Colorado, USA. Inspired by their American Pale Ale, he created a distinctly Australian version. As for the name? It’s a shoutout to the Alpha star, hence the design… about reaching for the pinnacle or apex.

This Australian style natural Pale Ale has dominated beer competitions since it first emerged in 1999, refocusing the craft beer world from US West Coast style hops and winter barleys, to the classics of Australia. Double fermented with special live yeast cultures that naturally carbonate this unfiltered and unadulterated traditional beer.

Aroma:

Dominated by fresh spicy citrus zest and exotic spice dust derived from the fresh hop flower additions made during re-fermentation.

Palate:

Very firm and dry with great length, refreshing bitterness and a long, lingering finish with hints of caramel, spicy oak and poached stone fruit. Your classic & original Australia Pale Ale.

Australian pale barley malt, English Crystal roasted barley malt.

Hops:

Australian Topaz, Cascade, Amarillo, Vic Secret, European Hersbrucker.

Yarra Valley mountain water.

tasting:

A balance between smooth bitterness, and crisp hops. The traditional Australian Pale Ale through and through. Best served cold, between 2-4ºC.

Dog bolter

First brewed by Matilda Bay in 1985, this full flavoured Dark Lager style has steadily been refined over the years, to become less 'look at me' to more 'just drink me'. Double fermented with special live yeast cultures that naturally carbonate this unfiltered and unadulterated traditional lager beer, it has an impressive dark red hue and glow through a mist of cloudy goodness. Aroma is chocolate, caramel and toast with a dusting of complex spice and pine resin from the fresh whole flower hops added during re-fermentation

Palate is deep, dark and complex, yet balanced by the silky backbone of caramel, malt, 'ever so light' malt sweetness, all deftly balanced by firm hop bitterness and a dry finish.

Dark Lager.

Chocolate, caramel and toast with a dusting of complex spice and pine resin from the fresh whole flower hops added during re-fermentation.

Palate:

Deep, dark and complex, yet balanced by the silky backbone of “ever so light” malt sweetness, all deftly balanced by firm hop bitterness and a dry finish.
